脆皮炸鲜奶
<P> 顺德的美食可真不少,不用我罗嗦大家都知道。以牛奶为主材的名小吃,如:双皮奶、姜撞奶、凤凰奶糊、牛乳......已是家喻户晓。以牛奶入菜的创意做法更是层出不穷,足可体现出顺德人对牛奶菜品投入的热情和智慧,不仅在岭南,就是在整个汉民族也是十分罕见的。对凤城牛奶菜色一向热衷的我,在餐厅吃就多了,自己还没真正拿捏过呢。今天就先做个简单又好吃的脆皮炸牛奶给自己一些信心吧!</P>

材料:牛奶500ml、粟粉(玉米粉)100克、自发粉(如果没有可以在普通面粉里掺发粉)1杯、糖70克</P>

把牛奶、粟粉、糖放锅里调成无粉粒的奶浆,用中慢火搅拌煮至浓稠凝固,熄火。</P>

倒入容器里抹平,放冰箱冷藏成冻奶糕(可放急冻室时间会快点)</P>

<P>冻奶糕切成小长方块</P>

<P>自发粉用3/4杯水、少许盐和油调成脆浆,将奶糕沾满脆浆</P>
